This recipe comes from the cookbook, On Pan, Two Plates. This is a great cookbook I recently bought and am enjoying cooking my way through. It is highly possible you will be seeing more recipes from this cookbook in the future.
For the pancakes:
1 zucchini, grated
1/2-1 c. panko bread crumbs
1 egg
1 clove garlic, minced
1 T. parsley
Combine all ingredients-start with 1/2 c. panko crumbs, if the mixture is still too fluid, add more crumbs until the mixture can be formed into 4 pancakes.
Heat 1 T. olive oil in a saucepan, add zucchini pancakes and cook 3 minutes on each side. Keep warm while you cook the chicken.
To the same pan add
2 T. butter
1 clove of garlic, minced
4 chicken tenderloins
Saute until chicken is no longer pink. Add 2-3 C, cherry tomatoes. Serve chicken on top of a zucchini pancake with cherry tomatoes on top.
