How about a nice bowl of noodles in a delicious peanut sauce? Add in the snow peas for crunch and chicken for protein and you have a whole meal in a bowl.
3 T. peanut butter
2 T. plus 1 t. rice vinegar
2 T. brown sugar
1 t. sesame oil
1 T. soy sauce
1 t. red pepper flakes
1 boneless skinless chicken breast
8 oz. linguini noodles
1 c. snow peas
2 carrots, shopped
2 green onions, chopped
2 T. minced cilantro
In a small bowl mix peanut butter, rice vinegar, brown sugar, sesame oil, soy sauce and red pepper flakes. Don't worry if it is not mixed well.
In a saucepan heat water to boiling. Add linguini and cook 8-10 minutes or until ad dente. Put aside 1/4 c. of the hot pasta water. Drain linguini.
In a large fry pan heat 1 T. olive oil. Add chicken and carrots. Cook until the chicken is no longer pink. Add snow peas, cook just until crisp. Add in peanut butter sauce and reserved water. Stir together well. Stir in noodles. Before serving sprinkle with green onions and cilantro.
