One Pan 2 Plates Macaroni and Cheese


I recently purchased a new cookbook at my local food Co-op, "One Pan 2 Plates."  Each recipe uses one pan to prepare dinner for 2.  This macaroni and cheese prepares enough for 4 or 2 with lot of leftovers.

2 c. macaroni
1/3 c. grated sharp cheddar cheese OR goat cheese
1/3 c.grated Parmesan cheese
1/3 c. shredded gruyere cheese
1 1/2 c. milk, warmed
2 T. flour
pinch of salt
1/4 t. nutmeg
1/2 . pankco crumbs
4 T. butter
3 T. bacon or proscutto, cut into strips and fried

In a large ovenproof sauce pan and bring water to boil--enough water to completely cover macaroni.  Add macaroni and cook about 7 minutes.  Drain.  Add 2 T. butter to pan and melt, pour into a bowl and combine with pankco crumbs. Add remaining butter to pan and melt, stir in flour and then whisk in milk.  Add cheese and stir until melted.  Add cooked macaroni. Mix well.  Sprinkle with pankco crumbs and bacon.  Put into a 375 degree oven and bake for 25 minutes.
