Insta Pot Pressure Cooker Beef Gyros


More and more people are learning the ease and joy of cooking in a pressure cooker.  While they are a little bit of an investment to buy, the pay off is tender meals cooked in a fraction of the time.  This meal cooks the meat and onions for the gyros in 25 minutes.  While that is cooking put together a nice Greek salad, warm up some naan or pita bread and you are ready for dinner!

In the instapot put:
  • 1 1/2 lbs beef chuck roast, or beef cross rib roast, or any type of beef..sliced into thin quarter inch strips
  • 1/2 large onion, sliced very thinly
  • 2 Tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp fresh lemon juice
  • 1/3 cup beef broth
  • Salt and pepper, to taste
Cook for 25 minutes.  Allow pressure to tap off on its own.  Then place in warmed pita bread, add some tomato, lettuce if desired, feta and a nice drizzle of tzatziki sauce,
  • Soft pita bread
  • Lettuce
  • Tomatoes
  • feta cheese
Tzatziki  sauce
In a food processor blend:
1/2 peeled, cubed cucumber
1 c. plain yogurt
1 clove of garlic, minced
1 T. dill
1 T. lemon juice
