Today was a beautiful sunny day...perfect for a big delicious salad. This salad has all the flavors of a sub sandwich, without the bread. If you want some bread-serve some toasted French bread or Texas toast on the side.
In a large salad bowl, toss together
- 4 cups shredded iceberg lettuce or shredded romaine hearts (I used half and half)
- 2 roma tomatoes, diced
- 1 cup black olives, pitted
- 1/4 red onion, sliced
- 1/4 cup sliced peppers
- 6 ounces diced pepparoni and salami
- 6 oz. diced Provolone cheese
Dressing: Whisk together all ingredients and toss with the salad
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar (just enough to give it some tang)
- 1 tablespoon Italian seasoning
- Pinch salt
- Freshly pepper
