Loaded Potato and Meatloaf Casserole


This recipe is pure comfort food for when that is just what you want, don't care about calories.  You can make your own homemade mashed potatoes, or if you want to go the easy way use instant as this recipe calls for.  This recipe comes from the website thisisnotdietfood.com.

  • 1 1/2 cups water
  • 1/2 cup milk
  • 1 4 oz pkg. instant mashed potatoes
  • 1 lb ground beef extra lean
  • 1/2 cup onion diced
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 cup bread crumbs
  • 1 egg
  • 1 1/2 cups grated Cheddar cheese
  • 1/4-1/2 c. bacon bits
  •  
  • In a saucepan, bring water to boil, add milk and instant potatoes, stir well and set aside.
  • In a bowl combine the ground beer, onion, brown sugar, Worcestershire sauce, bread crumbs and eggs.  Press the ground beef mixture into the bottom of an 8" x 8" baking dish.  Spread potaotes over the top like a frosting.  Sprinkle with cheese and bacon bits.  Bake at 400 degrees for 30 minutes, covering it with foil for the last 10 minutes.
