This is one of those recipes that can use easy ingredients to put together a baked good that looks fantastic and tastes great.
2 sheets puff pastry
apricot jam
1 egg
almond paste(if you can't find it in the store check recipe below.)
chopped almonds
orange zest
confectioners sugar
On a lightly floured board roll out the puff pastry into 2 rectangles. Whip egg and use as an egg wash around all sides of each pastry. Roll almond paste into 2 logs, each about 1" shorter than the width of each pastry. Sprinkle zest on top of paste. Fold side over the almond paste log-about 1" over. Roll dough into a log. Repeat with other piece of pastry. Place on a parchment lined baking sheet. Bake at 424 for 25 minutes. Heat apricot jam and brush over logs. Sprinkle with chopped almonds. Sprinkle with confectioners sugar.
For almond paste: In a food processor mix
- 1 1/2 cups very finely ground blanched almond flour/meal
- 1 1/2 cups powdered sugar
- Then mix in
- 2 teaspoons almond extract
- Then mix in
- 1 egg white
- Mix until it comes together. Take out an knead until smooth. Refrigerate until ready to use.
