Ham and Barbecued Bean Skillet



This is a handy little recipe all made in one skillet.  It is simple to put together, and tastes like down home comfort..or maybe a little like camping food.

1 T. vegetable oil
1/2 c. chopped onion
1 clove garlic, minced
1 c. chopped red, green, or yellow peppers
1 can kidney beans, drained
1 can cannellini beans, drained
1/2 c. ketchup
1/2 c. brown sugar
2 t. mustard
2 t. apple cider vinegar

Heat oil in a skillet.  Add onion, garlic and peppers.  Saute about 5 minutes on medium heat.  Add ham and continue to saute another 5 minutes.  Stir in remaining ingredients.  Simmer 10 minutes.
