Comfort food at its best..meatballs, potatoes, bechamel sauce and cheese. Perfect dinner for a cold, wet and rainy evening.
3 large potatoes, peeled
1/4 onion, diced
1# ground beef
1 T. chopped parsley
1/4 t. paprika
1 c. shredded mozzarella cheese
salt and pepper
Put potatoes in a large saucepan, cover with water and bring to a boil. Boil until the potatoes are beginning to get soft. Remove from the water. Slice. Arrange around the bottom and sides of a round baking dish, reserve some to go between the meatballs.
Mix the ground beef, parsley, paprika, and onion. Shape into meatballs and place in the baking dish over the potatoes in the bottom. Arrange the saved potatoes between the meatballs.
Bake in a 400 degree oven for 20 minutes. Make bechamel sauce, pour over the top. Sprinkle cheese on top and bake an additional 15 minutes.
Bechamel sauce
5 T. butter
4 T. flour
2 c. half and half
1 t. salt
pinch of nutmeg
Melt the butter in a saucepan. Whisk in flour and then half and half. Whisk in salt and nutmeg. Continue whisking until thick.
