Vegetarian Lo Mein


After all the indulgences over the holidays, an nice meal full of healthy vegetables just hits the spot.  This lo mein has a wonderful sauce with just a bit of a kick.

8 oz. thin spaghetti, cooked al dente and drained
1 T. oil
2 garlic cloves, mined
8 green onions, chopped
4 c. sliced mushrooms
4 c. fresh spinach
1 red or yellow pepper, cut into strips
2 c. fresh broccoli floweretts
2 c. sliced celery
2 c. sliced carrots

Heat oil in a large pan.  Add all the vegetables except spinach and saute around 8-10 minutes.  Stir in the spinach.  Saute another 5 minutes.  Mix in the sauce and serve in bowls.

For the sauce:
3 T. soy sauce
1 T. sesame oil
2 t. brown sugar
1 T. minced fresh ginger
1/2 t. Asian garlic chili paste or 2 t. tiger sauce
Mix together well.
