Well, it is Meatless Monday again. And another gloomy windy and rainy day...this just hits the spot on such a day...warm and flavorful, light and cheesy. I used spinach gnocchi because that's what I had in my pantry..but you can use whatever kind you like.
1/4 c. onion chopped
2 garlic cloves, minced
1 T. olive oil
1 pkg. potato gnocchi
1 c. fresh spinach
1 can (15 oz.) white kidney or cannelini beans
1 can (14 oz.) diced tomatoes
1 t. oregano
1 t. basil
1/3 c. shredded mozzarella cheese
1/3 c. Parmesan cheese
In a large skillet, saute onion and garlic in oil for 2 minutes. Add gnocchi cook for 5-6 minutes. Stir in spinach, cook until spinach wilts. Add tomatoes, beans, and spices. Heat simmering for 10 minutes.
Sprinkle with cheese. Cover and keep on warm until cheese melts.
