Cranberry Orange Yogurt Bread

This is a lovely little loaf just perfect with a cup of coffee or tea or hot chocolate...or whatever you drink!  It has a nice mixture of texture and flavor and the added bonus of plain yogurt...no oil or butter in this loaf!

Ingredients

  • 3/4 cup plain Greek yogurt
  • 1 c walnuts, roughly chopped
  • 2 c all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 c sugar
  • 1 large egg
  • ¾ c orange juice
  • 1 Tbsp orange zest
  • 2 c fresh cranberries

Whisk together the yogurt, sugar, egg, and orange juice in a medium size mixing bowl.  Now add in the flour, salt, baking powder, baking and soda.  Mix until it just comes together.  Add in the orange zest, cranberries and walnuts.  Spray a loaf pan and put the dough in.  Bake at 350 for one hour.
