Baked Parmesan Garlic Zucchini


It's that time of summer when the zucchini is coming on full blast...where you have to check the plants everyday or all of a sudden they are the size of baseball bats!  I will be sharing some great zucchini recipes in the next month as I wade my way through the mountains of zucchini in my garden.  Today I cooked these up...they are a great side to barbequed chicken or pork or sausages.
We had some fabulous chicken sausages from a meat market in a little German town we recently visited.

  • 2 zucchini
  • ¼ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp oregano
  • ½ tsp salt
Cut zucchini in fry shapes by quartering, and then cutting down as needed to edible sizes.  Put zucchini, olive oil and garlic in a bowl and toss well.  Put zucchini on a parchment lined cooky sheet.  Sprinkle with oregano, salt and cheese.  Put oven rack on top level.  Bake at 425 for 15 minutes.  Switch to broil and broil for 4-5 minutes.
