Dill Pickle Pasta Salad


The heat continues here in the Pacific NW.  Bleck!  It does not inspire long period of time cooking in the kitchen.  Tonight we are going to have the Pioneer Woman's Marlboro Man sandwiches (check this blog for the recipe).  As a side we are having this pasta salad.  It cooks up in only 12 minutes and then just needs to cool in the refrigerator until dinner time.  Perfect for a hot day.

  • 1/2 lb dry shell pasta (about 3 cups)
  • 3/4 cup sliced pickles
  • 2/3 cup cheddar cheese , diced
  • 3 tablespoons finely diced white onion
  • 2 tablespoons fresh dill
  • 1/2 cup pickle juice
Bring water to a boil in a large saucepan and add pasta.  Cook for about 12 minutes.  Drain.  Put back in pot with pickle juice and let set for 5 minutes then drain again.  Mix remaining salad ingredients in a medium size bowl.  Stir in dressing.  Then stir in pasta and cool in the refrigerator.

Dressing  Mix together all these ingredients:

  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/8 tsp cayenne pepper
  • 4 tablespoons pickle juice
  • salt & pepper to taste
