Zucchini, Peach, and Prosciutto Salad


Yes another zucchini recipe!  It is coming on strong now.  Plus I have peaches from my sister.  This salad has a variety of flavors for the adventurous cook.

3 c. salad greens
1/2 zucchini, sliced thin
2-3 slices cooked prosciutto
1 peach. peeled and sliced
2 T. fresh mint, chopped
2 c. french bread cubes
2 T. olive oil

Combine bread and olive oil.  Put in a saucepan on medium high high and cook until toasted/browned.  Put greens in a bowl, top with remaining ingredients.

For the dressing:
Whisk together 2 T. white wine vinegar and 2 T. olive oil
