Cube Steak Milanese


This dish is full of lovely flavors of basil, lemon and red onion.  The light salad dressing lightly dresses a spinach salad topped with the cube steak coated with bread crumbs and parmesan cheese.
This meat in this dish cooks in under 10 minutes.  A wonderful healthy dish in record time!

4 cube steaks
2 plum tomatoes, chopped
1/4 c. red onion, chopped
salt and pepper
4 T. parmesan or romano cheese
1 T. parsley
2/3 c. bread crumbs
2 c. spinach
4 t. olive oil
2 t. lemon juice
1 egg

Combine olive oil, lemon juice and basil for dressing. In a medium bowl combine spinach, tomato, and red onion.  Sprinkle with salt and pepper.  Pour dressing on and mix together. Sprinkle with 2 T. parmesan cheese.
In a bowl whip egg until white and yellow are mixed well.
In another bowl combine the bread crumbs, parsley, and 2 T. parmesan cheese.  Sprinkle meat with salt and pepper.  Dip both sides of meat into egg then bread crumb mixture.  Put 2 T. oil in frying pan, heat to medium heat.  Add meat and cook 2 minutes on one side, turn and cook 3-4  minutes on the other side.  Put salad on plates, top with meat and serve.
