I have these sweet little boat shaped bowls that are perfect for this recipe...but it would be just as tasty in a soup bowl. Basically it is a chili, served over tortilla or frito chips, then topped with sour cream and cheese.
1# ground beef or ground turkey
28 oz. canned tomatoes
1 8 oz. can tomato sauce
2 c. corn
1/2 c. chopped onion
1/2 c. red pepper, diced
3-4 T. chili powder
1 t. garlic powder
1 can red kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
In a dutch oven brown ground beef, onion, and red pepper. Cook until meat is no longer pink...drain off fat. Add tomatoes, sauce, beans, corn, chili powder and garlic powder. Simmer 20 minutes.
In a bowl put
frito chips or tortilla chips
top with chil
then cover with
grated cheddar cheese
and sour cream
