Slow Cooker Chicken Burritos


The burrito filling cooks in the slow cooker all day...resulting in a nice spicy shredded chicken filling.  After that you fill your burritos, top with a creamy sauce and dinner is served.  This is a great Friday night meal, when you may be tired from the work week and not feel like making dinner.  All you have to do is come home and put the burritos together.  Plus much healthier an economical than take out.

Filling:  In a crockpot put all ingredients and cook for 8 hours.
  • 2 pounds chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup mild salsa (medium if you like spicy)
  • 3-4 tablespoons brown sugar **
  • 1 4 oz. can mild diced green chilies
  • 1 14.5 oz. can diced tomatoes, drained
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons salt
  • 1 tsp EACH ground cumin, garlic powder, onion powder,
  • 1/2 tsp EACH smoked paprika, dry oregano, pepper
  • 1 teaspoons liquid smoke
  •  
  • Green Chili Burrito Sauce:

    • 3 tablespoons butter
    • 3 tablespoons flour
    • 2 cups chicken broth
    • 1/2 teaspoon cumin
    • 1/4-1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/2 cup sour cream
    • 1/2 4 oz. can mild chopped green chilies, or more to taste
    • 1/2 cup shredded monterey jack cheese
    •  
    • Melt butter in saucepan.  Whisk in flour and then broth and seasonings.  Cook until thickened, add chilies, cheese and our cream.

    •  Spoon sauce over burritos and serve.  YOu can always make this up ahead and put on the sauce and before serving heat in the oven at 350 for 15 minutes.
